There is a getOriginal() method available which returns an array of the original attribute values:

User::updating(function($user)
{
    if ($user->username != $user->getOriginal('username')) {
        doSomething();
    }

    // If you need multiple attributes you may use:
    // $originalAttributes = $user->getOriginal();
    // $originalUsername = $originalAttributes['username']; 
});
